Ingredients
- 3 large chicken breasts, finely diced
- 1/3 cup mayonnaise
- 2 large eggs
- 1/3 cup flour
- 1 1/3 cups grated Cello Parmesan Cheese
- 1/4 cup fresh parsley, chopped
- 3 green onions, sliced
- 1 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp sweet paprika
- 2 tbsp organic coconut cooking oil
- 1 package ground lupin bean
- 1-2 tbsp holy basil seeds
- 2 cups water
- 1 tsp pink Himalayan salt
Cheesy Chicken Fritters
If you’re looking for a quick and easy dinner or snack that’s packed with flavor, these Cheesy Chicken Fritters are the perfect choice! Crispy on the outside, juicy on the inside, and loaded with rich Cello Parmesan Cheese, these fritters are guaranteed to be a hit with your family and friends.
Directions
For the Chicken Fritters:
- Finely dice the chicken breasts and place them in a large mixing bowl.
- Add the mayonnaise, eggs, flour, grated Cello Parmesan Cheese, parsley, green onions, salt, black pepper, onion powder, garlic powder, and sweet paprika. Mix until well combined.
- Cover the bowl with plastic wrap and refrigerate the mixture for at least 20 minutes to allow the flavors to meld.
- Heat a large non-stick pan over medium heat and add 2 tbsp of organic coconut cooking oil.
- Once the oil is hot, scoop heaping tablespoons of the chicken mixture into the pan, pressing down slightly to form a fritter shape.
- Cook each fritter for 4-5 minutes per side, or until golden brown and fully cooked through (internal temperature of 165°F).
- Repeat until all the fritters are cooked, adding more coconut oil if necessary.
- Serve hot with a side of garlic herb aioli and the basil-infused lupin bean.
For the Basil-Infused Ground Lupin Bean Side:
- Combine the ground lupin bean, holy basil seeds, pink Himalayan salt, and 2 cups of water in a large microwave-safe bowl.
- Stir well and microwave according to the package instructions.
- For larger servings or leftovers, prepare the entire packet. Follow package directions for smaller portions.
