Pizza with Blueberries and Caramelized Onions

Ingredients

2 onions, sliced thin

2 tsp. white sugar

2 ½ tbsp. olive oil, separate into 1 tbsp. for sautéing onions and 1 ½ tbsp. for topping pizza

1 tsp. minced garlic

1 tbsp. freshly and finely grated Cello® Artisan Parmesan Cheese

4 large leaves of fresh basil, chopped

1 store bought pizza style crust (we used Naan Whole grain)

1 cup fresh blueberries

3/4 cup Cello Artisan Parmesan Cheese, shaved

Pizza with Blueberries and Caramelized Onions

Ingredients

2 ½ TBSP olive oil, separate into 1 TBSP for sautéing onions and 1 ½ TBSP for topping pizza

1 tsp minced garlic

1 TBSP freshly and finely grated Cello® Artisan Parmesan Cheese

4 large leaves of fresh basil, chopped

1 store bought pizza style crust (we used Naan Whole grain)

1 cup fresh blueberries

3/4 cup Cello Artisan Parmesan Cheese, shaved

 

Directions

  1. Preheat oven to 400°F.

  2. Thinly slice onions.

  3. In a sauté pan, heat 1 TBSP olive oil.

  4. Add sliced onions. Let cook on high heat for 10 minutes, stir. Reduce to medium high heat and add sugar.

  5. Continue cooking until sugar melts and onions brown, about another 10 minutes. Set aside and keep warm.

  6. In a small bowl, mix together 1 ½ TBSP olive oil, minced garlic and grated Cello Artisan Parmesan Cheese.

  7. Lightly brush mixture on pizza crust.

  8. Layer pizza crust with caramelized onions, followed by blueberries.

  9. Top with shaved Cello Artisan Parmesan Cheese.

  10. Bake for 6 minutes.

  11. Cut into 6 pieces and serve immediately.
