16 oz. Cello Taleggio Cheese
16 slices Rustic Raisin Bread
½ tsp each cinnamon, nutmeg, allspice
1 cup light cream
¼ cup brown sugar
1 tsp butter
1/3 cup each, dry cherries, cranberries, apricots
½ cup honey
2 oranges zested and segmented
8 small sprigs of mint for garnish
- Preheat oven to 400oF
- Mix together the eggs, cream and brown sugar.
- Simmer the dried fruits with orange zest, cinnamon, nutmeg, allspice and butter.
- Place a layer of bread in an oiled pan, spread a layer of Cello Taleggio, top with a layer of egg mix then dry fruit. Repeat twice. Press to moisten.
- Bake for 30 minutes in a 400oF oven. Cool slightly and cut into eight servings. Garnish with orange segments and mint. Serve with drizzled honey.
