French Toast Casserole with Dried Fruit and Honey Glaze

16 oz. Cello Taleggio Cheese

16 slices Rustic Raisin Bread

8 eggs

½ tsp each cinnamon, nutmeg, allspice

1 cup light cream

¼ cup brown sugar

1 tsp butter

1/3 cup each, dry cherries, cranberries, apricots

½ cup honey

2 oranges zested and segmented

8 small sprigs of mint for garnish


  1. Preheat oven to 400oF
  2. Mix together the eggs, cream and brown sugar.
  3. Simmer the dried fruits with orange zest, cinnamon, nutmeg, allspice and butter.
  4. Place a layer of bread in an oiled pan, spread a layer of Cello Taleggio, top with a layer of egg mix then dry fruit.  Repeat twice.  Press to moisten.
  5. Bake for 30 minutes in a 400oF oven.  Cool slightly and cut into eight servings.  Garnish with orange segments and mint.  Serve with drizzled honey.
