Cello Parmigiano Reggiano is imported from Italy. It is known as the “King of Cheeses” and is still made today as it was centuries ago using fresh raw cow’s milk from its area of origin. The production of milk and the cheese making both must take place in the provinces of Parma, Reggio Emilia, Modena, Bologna to the west of the Reno River or Mantua to the east of the Po River. Parmigiano Reggiano has the Italian Protected Designation of Origin (P.D.O.), certification. Its quality and aging are monitored like that of fine wine. Each wheel is hand crafted and aged for a minimum of 24 months. Parmigiano Reggiano has a sharp, complex fruity nutty taste and a strong savory flavor. Its crystalline texture actually crunches when you eat it.
